The Best Rice?

What is your favorite rice for the following things?

1) Fried rice

2) White rice for eating with a Vietnamese meal

3) Brown rice

I have tried Jasmati for fried rice, but it was too sticky and didn’t incorporate ingredients very well - and Jasmine rice seems like it wouldn’t be sticky enough, though I admit I haven’t tried it. I have a sweet rice, but that would also be too sticky. I don’t remember the brown rice that I bought, but it was way too dry - I think maybe I need to try a shorter brown rice.

What are your favorite brands or types rice?

I love Basmati rice. I’m not sure if that is different than Jasmati or not. I cook it in a steamer and it is not very sticky.

Jonathan reply on May 6th, 2008:

Thanks. Jasmati is a cross between Jasmine and Basmati - maybe regular Basmati is what I need to try.

Kroger store brand, medium grain white rice. Good for congee (rice porridge), can be made dry or sticky depending on the amount of water.

  3. Linh says:

We like to mix some long grain (jasmine or most brands from Thailand and Vietnam) with short grain(most brands from Korea or Japan) so it isn’t too dry or to sticky. For fried rice use long grain but cook it and then put it in the fridge overnight. The trick is to stir fry it while it’s nice and cold. Start off with some oil with smashed ginger and garlic so that the oil’s nice and fragrant. Add your rice. Don’t add your liquids and “wet” veggies until the end (soy sauce, some broth, peas). Good luck! Let me know if you want to learn how to make “xoi” or the sticky rice used for desserts. Yum.
